I have never yet put an actual hot chocolate recipe on my blog, so I figured it was high time I had one on here. Especially since we are entering the winter season which means perfect hot chocolate weather! Even though I drink it year round…
This sugar free hot chocolate recipe I’m sharing today is flavored with a coconut caramel combination and is so good. I LOVE caramel and since I drink regular caramel hot chocolate a lot, I was ready to switch it up a little. Adding a bit of coconut extract was perfect!
Why sugar free hot chocolate?
Before I started Trim Healthy Mama, I hardly ever drank hot chocolate. That was because the hot chocolate mixes you buy from most stores are full of sugar. I would sometimes buy an organic brand of cocoa mix, but even these ones contained sweeteners like coconut sugar that still can easily spike your blood sugar, even though they are slightly healthier than regular sugar.
Since maintaining an even blood sugar is critical to overall good health, I simply avoided drinking hot chocolate often. I knew low carb sweeteners wouldn’t spike blood sugar, but I had never found any I liked.
Then I discovered the Trim Healthy Mama brand of low carb sweeteners. This was life changing since they didn’t have nearly as much of an awful aftertaste as all the other natural sweeteners I had tried. Imagine my excitement to start being able to enjoy sweet things again!
And interestingly enough, after using only the THM sweeteners for a while, I tried some other brands again and I now enjoy them too! The THM brand was perfect for getting me used to enjoying low carb sweeteners, but these days I make my own DIY blend since it is much cheaper for me. I still do use the THM pure stevia powder though, as I love that stuff!

What sweetener can I use?
In this recipe I use mostly straight THM pure stevia with a little bit of my homemade Sweet Mix. I use the Sweet Mix recipe from the cookbook Food For Life and it is three times as sweet as sugar.
You could substitute the Sweet Mix with Truvia or Gentle Sweet, although you might need a little extra if using Gentle Sweet.
Another option is to use a sweetener that is the same sweetness as sugar, such as xylitol or a monk fruit blend. You will need three tablespoons of these instead of the one tablespoon of Sweet Mix called for, since Sweet Mix is three times as sweet as a 1:1 sugar substitute.
Since everyone has different tastes, and low carb sweeteners are all a little different, I always recommend to follow a recipe as closely as possible, substituting sweeteners if necessary with the ones you have, and then sweetening to taste.
What brand of cocoa powder should I use?
I love the Rodelle brand of organic cocoa the Costco carries. I have also heard that the Ghiradelli brand is very good, but that one I haven’t tried. Currently, I’m using Fry’s cocoa powder and it honestly isn’t that great for making hot chocolate, but it is all I have at the moment!
I have ordered several new cocoa powder brands to try based on my own research and recommendations from my Instagram community. These will be so fun to test out! I will definitely be sharing my thoughts about them on Instagram, and maybe I will even write a blog post on it, since hot chocolate is my thing, lol.
How much cocoa?
I tend to like a good strong chocolate flavor, so I usually use two tablespoons of cocoa in one and a half cups of hot liquid.
If you don’t want such a rich chocolate flavor, or depending on the brand of cocoa you are using, you could try just 1 1/2 tablespoons of cocoa.

This hot chocolate is a fuel pull!
Since I like to drink hot chocolate throughout the day, I almost always make mine a Trim Healthy Mama fuel pull. This means that it is low in both fats and carbs and I’m not drinking extra calories that could easily add up.
Five grams of fat is allowed for a food or drink still to be considered fuel pull. This hot chocolate would be considered ‘ultra fuel pull’ since the only tiny bit of fat in it is from the 1/4 cup of almond milk and that is pretty much negligible.
How to make this hot chocolate a little richer
If you want this hot chocolate to be more luxurious, you could add up to a teaspoon of a fat such as butter, coconut oil or MCT oil and it would still be a fuel pull.
For a Deep S, add 1-3 teaspoons of fat. And for a regular S that is a little creamier, add 1-2 teaspoons of fat and 1 tablespoon of heavy whipping cream or half and half.
When I make my hot chocolate an S, I include it with a meal or snack. Any other time of the day, I don’t need the calories, and keep it fuel pull.

Sugar Free Coconut Caramel Hot Chocolate recipe:
Ingredients:
2 tablespoons cocoa powder
4-5 pinches sea salt
4 doonks THM pure stevia
1 tablespoon Sweet Mix, Truvia or Gentle Sweet, or favorite sweetener to taste
1/4 teaspoon coconut extract
1 teaspoon caramel extract
Scant 1/8 teaspoon sunflower lecithin
1/4 cup almond or cashew milk
1 1/2 cups boiling water
Instructions:
- Add all ingredients to a blender.
- Blend until combined and frothy, being careful with hot liquids.
- Enjoy!
