I love making muffins to keep in the freezer for easy breakfasts and snacks. It is so easy to grab a couple the day before when I am packing my lunch bag for the next day, throw them in a zip lock bag or container, and I’m good to go.
No one can say they don’t have time to do THM. There are literally no excuses! We all have time to make a batch or even better, double batch of muffins and pop them in the freezer. After that, it literally takes less than one minute to get them from the freezer to your lunch bag.
E breakfasts are my go to
I usually do E breakfasts and will make things like sourdough apple fritter bread, Aunty Pearl’s muffins from Trim Healthy Future, or my Orange Date muffins.
However, sometimes it is nice to have a S muffin for a change. These Sesame Flax ones are so good with butter! If I’m taking them to work, I put a little butter in a tiny container because otherwise I’ll be stuck with margarine and that ain’t going in my mouth!
My sister also likes to have these muffins for work meals.

Why are these muffins a S when they have wheat bran?
When calculating net carbs we have to subtract the fiber from the carbs. Just like oat fiber is a fuel pull because of this, wheat bran also has minimal net carbs because of all the fiber.
This recipe also has ground flax and whole flax so there is no shortage of fiber!
Have you ever tried black sesame seeds?
I love all the little seeds in these muffins! I have always been partial to things like seeded breads.
It’s fun to use black sesame seeds in this recipe if you happen to find some. I had bought them for Asian dishes and used them when I made these muffins because that’s what I had.
Black sesame seeds seem a little nuttier to me. But maybe that’s just me. In any case, you can use either black or regular white sesame seeds in this recipe.
These muffins are dairy free!
These muffins are also dairy free, so that is a bonus!
Many ladies need to be dairy free, and many go dairy light as it can hinder weight loss in certain cases if consumed too heavily.
Sometimes its good to cut back on dairy and these muffins help you do that without even having to try!

Alright, let’s get to the recipe!
Sesame Flax Breakfast Muffins Recipe:
Ingredients:
½ cup Gentle Sweet
1 ½ cups wheat bran
⅔ cup almond flour
½ cup ground flax
¼ cup white or black sesame seeds
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
½ cup light olive oil
½ cup nut milk
2 eggs
1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Whisk the dry ingredients in a bowl and then whisk the wet ingredients together in a separate bowl. Combine the wet and dry ingredients and stir together well.
- Line a 12 cup muffin pan with liners and spray lightly with oil. Divide the batter between the twelve cups. Bake for 22-25 minutes or until firm to touch.
Note: There are 2.5 net grams of carbs per muffin.

No, you could use oat bran, but oat fiber is a whole different story.😊
