A delicious veggie packed stuffed pepper with a pizza twist!

There are a lot of kitchen appliances that I buy thinking I will use all the time and then they end up sitting in the cupboard and hardly ever get touched. The air fryer is the opposite of this! I wasn’t sure how much I would use it and turns out I absolutely love it.
It makes quick meals a breeze and adds that crispy touch that tastes like something has been deep fried but is in fact often suitable for Trim Healthy Mama E or FP meals!
I love recipes that are loaded with veggies!
These stuffed peppers are a THM S and have so many veggies snuck into them [not to mention they are in a veggie ‘holder’, that they make a complete meal on their own, but would be great served with a side salad to help bulk up the meal.
Trouble with your peppers falling over?

Some peppers don’t want to sit straight up so you might need to slice a tiny bit off the bottom to make them flat. Don’t do too much or you will open up the bottom, but even if that happens you can still make it work. Ask me how I know lol.
What if I don’t have an air fryer?
If you don’t have an air fryer, I would bake the peppers at 425 degrees Fahrenheit until soft. Keep in mind it will take at least twice as long as the air fryer.

Pizza Air Fryer Stuffed Peppers Recipe:
Ingredients:
1 tablespoon coconut oil
6 bell peppers
1 lb ground meat [I used beef]
1 heaping cup diced pepperoni
1 small onion, diced
1 minced garlic clove
2 cups chopped mushrooms
2 cups cauliflower rice, I used straight from the freezer
1 ½ teaspoons sea salt
1/4 teaspoon pepper
1 teaspoon parsley
1 teaspoon garlic powder
2 teaspoons oregano
½ teaspoon basil
1 can tomato sauce, 400 ml
Shredded cheese
Instructions:
1. Preheat your air fryer to 375 degrees Fahrenheit.
2. Slice the tops off your peppers and scoop out the seeds and ribs. Cut a small slice off the bottom if necessary so they stand up straight. Lightly spray them with oil and air fry for 3 minutes.
3. Heat the coconut oil in a large frying pan. Add the meats, chopped veggies and spices and fry until the ground meat has cooked through and the veggies are soft and the water from them has evaporated. Remove the pan from the heat and stir in the tomato sauce.
4. Fill the peppers to the top with the meat mixture. Air fry for 10 minutes. Remove and top generously with shredded cheese, cook two more minutes. Enjoy!
