Low Fat Salted Caramel Peanut Butter Spread

A quick and delicious low fat peanut spread to put on top of everything!

I don’t know about you but I LOVE peanut butter! The sad thing is that because it is so calorie dense, it is very easy to eat way too much of it!

There is nothing wrong with eating heavier fats, but life is all about balance. We don’t always need to be dunking enormous celery stalks into a vat of peanut butter. [Preaching to myself here, good ole’ p.b. is my weakness, lol!]

When you are craving the taste of peanut butter, but want to keep things lighter, this salted caramel peanut butter spread is the perfect solution!

This recipe is a Trim Healthy Mama Fuel Pull!

Hip hip hooray!! This peanut spread isn’t just light, it’s even a fuel pull, so long as you don’t eat too much of it! I haven’t actually figured out how much you would have to eat to be getting enough fat for it to be an S. But just to be safe, I don’t eat more than a quarter cup when I want to keep it under the 5 grams of fat for a fuel pull.

Have you had peanut junkie butter before?

In the Trim Healthy Mama cookbook there is a recipe called peanut junkie butter that is similar to this recipe I’m sharing today.

I find the peanut junkie butter a little bit plain though, so I had to kick it up a notch. Other than peanut butter, one of my other favorite things is anything salted caramel.

Combine the two and you’ve got something pretty yummy! Like these Salted Caramel PB Crunch No Bake Bars.

How can I use this peanut spread?

Because this is a low fat peanut butter, it can be used in E meals! I love a dollop on top of oatmeal or on Wasa crackers. It is also fantastic for dipping apple slices in!

Actually, the newest thing I’m doing with this is slicing a banana into a bowl and sprinkling on some granola. Then I add a spoonful of this salted caramel peanut butter and pour chocolate sauce over it all. A delicious concoction that makes a super quick E snack or breakfast!

I also do the same thing using crumbled pork rinds instead of banana and granola for a slightly unusual but delicious snack!

It is also great on top of pancakes or waffles as you can see from the pictures! You could use it as an ice cream topping as well! This would make a great FP dessert on top of the Tummy Tucking Ice cream recipe in the Trim Healthy Mama cookbook!

Another way I like to use this spread is putting a spoonful on top of Salted Caramel Gluccie Pudding. Sometimes I’ll also add granola to the gluccie pudding to make it an E meal.

As you can see, there are many creative ways to use this recipe. Not to mention it’s also great straight off a spoon!

How long does this last?

I would keep it in the fridge for up to a week. The flavor can start to go a bit ‘off’, or it gets watery if it sits longer then that.

Adjust the almond milk if desired

The amount of almond milk I call for makes a nice soft, not too thick consistency. It might seem slightly runny when you first mix it up, but the peanut flour will continue to absorb liquid as it sits.

You can cut back the almond milk a bit to make it thicker or add extra so its more like a caramel sauce you can drizzle on top of things.

Choose your peanut flour with care!

Defatted peanut flour is the magical ingredient that keeps this recipe tasting like peanut butter, but low in calories. Be careful when buying peanut flour as many brands add sugar. Defatted peanut flour should be the only ingredient. I buy the Protein Plus brand.

Ingredients

  • 1 cup defatted peanut flour
  • 3 tablespoons Truvia Sweet Mix, or sweetener to taste
  • 1/4 teaspoon sea salt
  • 1 teaspoon caramel extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 1/2 cup almond or cashew milk

Instructions

  • Combine all ingredients and mix well. Store in the fridge for up to a week.

    Looks yummy. How much Gentle Sweet would I use in this recipe?

      Hi Mary Lou! Gentle Sweet isn’t quite as sweet as the homemade Sweet Mix I use most often, so I would try 3-4 tablespoons and then taste to see how you like it. You can add more if you want it sweeter.😊
