I’ve got just the recipe you want! This tangy dressing also has a slight hint of sweet that makes it just perfection. My friend tells me this is the dressing that got her eating salads. Lol.

Have you used miso paste before?
Serene has it in some of her recipes in the THM Cookbooks. Miso is a paste made from fermented soybeans.
Because it is fermented, it is great for gut health! It is full of vitamins and beneficial bacteria.
It has an umami flavor kind of like soy sauce. In fact, ½ a tablespoon of soy sauce can be substituted for 1 tablespoon of miso. In this recipe, I recommend using miso though because it helps thicken and emulsify the dressing.
What kind of oil is best to use?
I like to use light olive oil or avocado oil for salad dressings since neither of them get hard in the fridge.
You could even do a mixture of both or add in some MCT oil. So long as you have 1 cup of oil at the end, it doesn’t matter how much of each you use.

Keto Miso Salad Dressing Recipe:
Ingredients:
1 cup light olive oil or avocado oil [ can use a mix of both and even add MCT]
½ teaspoon sea salt
1 tablespoon dried oregano
2 tablespoons miso paste [any kind]
1 tablespoon dijon mustard
3-4 doonks of THM pure stevia [start with 3 and see how you like it]
1 clove finely minced garlic
⅓ cup + 2 tablespoons apple cider vinegar
Instructions:
- Combine all ingredients in a blender and blend until combined and emulsified.[Alternatively you could whisk together by hand or with a immersion blender.] Store in the fridge.
