Yup, I’m doing it again. I almost feel guilty sharing another salted caramel and peanut themed recipe but this is seriously one of my favorite flavor combinations!
I mean you can’t go wrong with caramel and you can’t go wrong with peanut butter. [Unless you are allergic to it….] Combine the two and you have something truly delicious. They play off each other so well.
Making your own nut butter can be money saving
Making your own nut butter at home is a cinch! My favorite thing about it is that I can make delicious flavors that would normally be very expensive to buy. I do buy regular peanut butter, but I’m sure it would actually be cheaper to make it, although I haven’t done the math.
But when it comes to nut butters like hazelnut, cashew and almond, making your own is definitely more cost effective. These can be extremely expensive to buy in the store.
In fact, that is how the whole idea for this nut butter came about! I was shopping in Bulk Barn and came across a salted caramel peanut protein butter. It looked absolutely amazing but the price tag definitely made me gulp. It was seventeen dollars and the jar wasn’t that big!
There was no way I was going to pay that price so I checked out the ingredients and headed over to the nut aisle to buy some peanuts. Then I came home and recreated it. I have no idea how that nut butter in the store tasted, but I can vouch for mine…..it’s amazing!

This nut butter might be too amazing….
I better just warn you, this homemade peanut pecan butter is deadly addictive, lol. You might find yourself just wanting to eat it with a spoon! While we are definitely not afraid of calories on the Trim Healthy Mama plan, we don’t want to abuse them either.
I’m not going to tell you how much of this nut butter to eat at once, [insert wink], but I will warn you that it is definitely a calorie dense food so be aware of that before you get out the spoon.
What is it about nut butters that are just so good, anyway?

Other than peanuts and pecans, this recipe also has some hemp hearts and chia seeds for extra protein and health benefits.
So how do I make nut butter anyway?
Making your own homemade nut butter is actually very simple. It can be as simple as just nuts, but I usually add in some oil as well to make it smoother. This recipe is an exception as the nuts and seeds had enough oils of their own to completely break down.
If you do want to add oil when you are making a nut butter, pick one that stays liquid easily. My favorite oil to use is avocado oil. You could also use MCT oil.

The first step is to put all your ingredients in your food processor.

Then you process it for about three to five minutes before stopping and scraping down the sides.

Continue to process another 3-5 minutes or until the nut butter is smooth and the right consistency. You can always add in a little oil to get the consistency you want.
You can follow this process to make any kind of nut butter. For a basic version, start with just plain nuts of your choice. You can add salt or just leave it as is.
What if I don’t have a food processor?
Nut butters can also be made in a blender. You will just need a high powered one. Simply put all the ingredients into your blender and blend until smooth. You will probably need to use a tamper or scrape down the sides often. You are also more likely to need to add in some oil when using a blender versus a food processor.

How should I use this nut butter?
You can spread this peanut pecan butter on toast, pancakes or waffles. Make sure to use a low carb bread if you follow the Trim Healthy Mama plan and don’t want a crossover.
It would be great spread on a low carb wrap as a snack. You could even fold the wrap up and then fry it to get a toasty warm sweet quesadilla type of treat.
Of course it would be absolutely amazing on bananas or apples. Stick with one teaspoon as a E meal or enjoy more as a crossover.
You could swirl it on top of oatmeal or smoothie bowls.
You could also use it to make energy bites for a quick, healthy snack that is ready to grab and go. This recipe for Peanut Butter Protein Balls uses honey and oats so it would be a THM crossover, but a great option for kids, or if you have a high metabolism or are pregnant or nursing.
And you could easily swap out the almond butter in these THM S Almond Butter Chocolate Chip Protein Balls with your salted caramel peanut pecan butter.
Salted Caramel Peanut Pecan Nut Butter Recipe:
Ingredients:
1 cup unsalted roasted peanuts
1 cup pecans
1/2 teaspoon sunflower lethicin
1/2 teaspoon sea salt
1/4 cup xylitol
1/4 cup hemp hearts
1 tablespoon chia seeds
1 teaspoon caramel extract
Instructions:
- Add all the ingredients to a food processor.
- Process three minutes then stop and scrape down the sides of the bowl.
- Continue processing another 3-5 minutes or until the nut butter is smooth and the consistency you want.
