I can guarantee you will be tempted to just eat it straight off the spoon. It might never make it to your cake!
What makes this frosting so awesome?

I have been making this frosting for quite a while
I came up with this recipe a long time ago but I never measured the ingredients or wrote it down. It is something that changes every time I make it!
Sometimes I will throw in a little sour cream or cream cheese. Sometimes I will add canned coconut milk. It all depends what is in the fridge that needs to be used up!
When I finally decided to write this down and share it here on the blog, I was quite at a loss as to how to measure the ingredients lol. It turns out every time but sure enough, when trying to measure things I got it wrong and it ended up way too runny.
It was a happy mistake though because I turned that flop into popsicles that are so good they will be coming to the blog this summer!
On my second attempt I got the measurements right with a beautiful consistency to the frosting.

This sugar free frosting holds it shape well
I mean, just look at this picture! Do you see how high it is possible to pipe this frosting?
It is nice and firm and you won’t need to worry about it sliding off or going runny. The peanut butter in it definitely helps it stay solid, yet deliciously creamy and silky.
How long does it last?
You can store this frosting for several days or up to a week in the fridge, although I have to say it has never stayed around long enough to truly see how well it lasts, lol.
Store any leftovers in a tightly sealed container.

A few tips:
- This frosting should be ready to use straight out of the blender, especially if you are spreading it on a cake. If you want it even thicker for fancy piping, let it chill in the fridge for a while and it will get even firmer.
- This probably goes without saying but resist any temptation to frost your cakes or cupcakes while they are still warm from baking. They need to be completely cool so this icing doesn’t melt.
- If for any reason the icing is not as firm as you would like, you can sprinkle in a tiny bit of glucomannan powder and whisk it in to thicken it a bit more.
What to use this frosting on
This peanut butter frosting tastes great on chocolate or vanilla cakes and cupcakes. If you are looking for some great low carb versions of these, here are some to get you started:

Sugar Free Peanut Butter Frosting Recipe:
Ingredients:
3/4 cup sugar free, all natural peanut butter
1 1/3 cups whipping cream
1 1/2 teaspoons caramel or vanilla extract
1/4 teaspoon sea salt
1/4 – 1/3 cup Gentle Sweet or to taste
Instructions:
- Place all the ingredients in a blender and blend for 10 seconds on high. Scrape down the sides and blend a few more seconds. It should go nice and thick.
- Transfer to a bowl or air tight container and add more sweetener if necessary to suit your taste. You can use the frosting right away or store it in the fridge until needed.
This recipe yields just over two cups of frosting.

Do you use granular or powdered sweetener?
I use granular because I rarely have powdered on hand unless I make it myself! I’m sure you could use powdered as well, maybe just a bit less.
