Easy Breakfast Skillet: Denver Hash with Spicy Mayo

A scrumptious and veggie filled twist on the traditional Denver sandwich!

I think I say this all the time but I am so excited to share this recipe because it is the BOMB!

I just love a dish packed with veggies that makes you feel like you are getting healthier with every mouthful lol. And healthy food should NOT be boring! It should be so delicious you are savoring every bite.

This is one of those super healthy and also super yummy meals!

Sometimes I get a recipe idea and it sounds great in theory. But of course I never know just how it is actually going to turn out. And then I make it and it blows me away with how delicious it is. My Red Velvet Cookie Dough Bites is one example of this. And this recipe is another.

A Denver sandwich made over into a breakfast skillet sounds amazing, and let me tell you, the results are as good as it sounds!

I’m someone who needs variety in my food. I have to be excited about my next meal! It makes it a lot easier to stay on track and not nibble between meals when you are looking forward to your next meal and don’t want to ruin the experience!

Yeah, I’m a foodie but that is a good thing! Those of us who really love eating aren’t about to start shoveling in potato chips an hour before supper and then not be able to enjoy our meal!

Pearl talks about this on the Trim Healthy Mama podcast Episode 145 and I totally related to her! She felt guilty sometimes for how much she thought about food and what her next meal was going to be. But in reality it actually helps her stay on track with healthy eating!

Anyway, my point was, I love and need variety and it’s not often I eat the same meal more than once in a row. But this dish is something I was packing for breakfast and lunch at work and still excited to eat every time!

The spicy mayo drizzle takes this dish over the top!

I did stray a little from the traditional Denver sandwich by adding a spicy mayo to top the dish with just before serving. DO NOT omit this part! It is amazing.

You might find yourself needing to double the recipe because you’ve licked the spoon a few too many times while stirring it up! Or you want to be generous with how much you put on….I had to make myself some more because I love my condiments lol.

Don’t be scared by the word spicy

I love spicy foods but if they aren’t your thing, don’t worry. The mayo isn’t a hot spicy, it just adds a delicious zip.

How did I incorporate the Denver taste?

This skillet has all the classic Denver ingredients of ham, green peppers, onions and eggs. It makes great leftovers as the flavors just seem to keep getting better!

But, since this is a skillet meal, I needed something to give it some bulk so I turned to an old trusty favorite, cauliflower rice!

Who else loves cauli rice?

Cauliflower rice is just so versatile! It is a superhero. Delicious and nutritious and the perfect low carb alternative for soaking up saucy dishes and so much more!

[Spoiler alert: I have an idea for a fall pumpkin oatmeal with cauli rice so stay tuned for that!]

I was super excited to find frozen cauliflower rice for an amazing price at Costco. Usually the pre-riced bags are not worth the price in my opinion, but this was a bargain.

The bags I bought are each 500 grams and I used two of them so you will need 1 kilogram of cauli rice for this recipe.

I let my bags sit out for a while before making starting to cook so that the rice was partially thawed. I also like to cook it over high heat after I’ve put it in the skillet. This helps evaporate the water as the rice thaws and keeps things from getting soggy.

Generally after you first put it in the skillet, you will start to see some water and it seems as if the rice is just getting soft and steaming. But just wait. After a while the water will evaporate and the rice will start to fry and get a little brown. At this point it is usually cooked through.

Denver Breakfast Hash with Spicy Mayo

An easy, low carb breakfast skillet packed full of veggies and delicious flavors! Makes 4-5 servings.

Ingredients

  • 1 tablespoon coconut oil or butter
  • 1/2 an onion diced
  • 1 diced green pepper
  • 1 kilogram frozen riced cauliflower set out about 10-15 minutes to thaw
  • 12 slices smoked deli ham cut into small pieces
  • 1 teaspoon sea salt
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 5-6 eggs
  • Fresh parsley to garnish optional

Spicy Mayo:

  • 1/4 cup bought or homemade mayonnaise
  • 3 pinches sea salt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon prepared horseradish
  • 1 teaspoon Franks original hot sauce
  • Squeeze of fresh lemon juice

Instructions

  • Melt the oil in a large skillet. Add in the diced onion and green pepper and saute until the onion is starting to soften and turn translucent.
  • Add the cauliflower rice to the skillet. Sprinkle over the salt, onion and garlic powder and pepper and stir all together. Saute over high heat until the cauliflower rice is soft and starting to brown and all the liquid has evaporated.
  • Add in the ham and saute about 30 seconds.
  • Crack in 5-6 eggs or as many as you want to fit into your skillet. Cover the skillet with a lid or cookie sheet and cook eggs 5-6 minutes or until desired doneness.
  • While the eggs are cooking, mix together the spicy mayo ingredients.
  • When the eggs are done, remove the skillet with from the heat and top with a few grinds of salt and pepper and parsley to garnish. Drizzle on the spicy mayo or serve it on the side to dollop on top!
